One week after the Fast

A week of eating now behind me, I did a six mile walk today with relative ease. My heart rate is falling quickly back to normal and my appetite has returned to normal. I will still take it easy over the coming two weeks, restricting my calorie intake to 1500 – 2000 per day. Today is my last of my daily updates; I may do another update next week.

Today I cooked a Sunday roast for everyone. I usually do myself a nut or lentil roast, but today I decided just to go for vegetables. Roast pork for the family, together with roasted potatoes, sweet potatoes and parsnips. I all put together an array of 7 other vegetables, (I wanted to taste everything!); beetroot, carrots. Broccoli, green beans, sweetcorn, cabbage and of course brussel sprouts. The sprouts I roasted in coconut oil with salt, pepper and Harissa spice. Served with olive oil and a drizzle of pomegranate syrup. The recipe can be found here.  It is outstanding. The whole meal was outstanding, and the fact that I was sat down with the family eating pretty much the same meal was great as well. The problem was that it was so good that I ended up eating much more than I should have, but hey ho, it has been a while since I have had a proper meal like that.

Back to normal (ish), this week I will reintroduce, cheese, eggs, beans and lentils. Bread, in limited amounts will come in next weekend.

Weight today 95.7Kg, water drank today is 1.5 litres. Resting Heart Rate is 74 BPM. Calories consumed 1,477.
