A week of eating now behind me, I did a six mile walk today with relative ease. My heart rate is falling quickly back to normal and my appetite has returned to normal. I will still take it easy over the coming two weeks, restricting my calorie intake to 1500 – 2000 per day. Today is my last of my daily updates; I may do another update next week.
Today I cooked a Sunday roast for everyone. I usually do myself a nut or lentil roast, but today I decided just to go for vegetables. Roast pork for the family, together with roasted potatoes, sweet potatoes and parsnips. I all put together an array of 7 other vegetables, (I wanted to taste everything!); beetroot, carrots. Broccoli, green beans, sweetcorn, cabbage and of course brussel sprouts. The sprouts I roasted in coconut oil with salt, pepper and Harissa spice. Served with olive oil and a drizzle of pomegranate syrup. The whole meal was outstanding, and the fact that I was sat down with the family eating pretty much the same meal was great as well. The problem was that it was so good that I ended up eating much more than I should have, but hey ho, it has been a while since I have had a proper meal like that.
Back to normal (ish), this week I will reintroduce, cheese, eggs, beans and lentils. Bread, in limited amounts will come in next weekend.
